Stuffed Peppers and Marinated Aubergine

In continuation to my earlier posts (Cooking this weekend) and Crazy Layered Custard

Stuffed Peppers

Ingredients

  1. 2-3 Peppers (one for each diner)
  2. one large finely chopped onion
  3. one cup Potato mash(I used the ready Smash/You can boil potatoes, peel and then mash them)
  4. 1/2 cup boiled green peas
  5. 5-6 tbsp olive oil
  6. 1 tea-spoon chilli powder
  7. 1/2 tea-spoon pepper powder
  8. 1/2 tea-spoon crushed pepper
  9. salt to taste
  10. a pinch of sugar
  11. one tbsp tamarind paste
  12. 2 tbsp Finely Chopped Cilantro leafs
  13. 1-2 pinches of dry mango powder (amchur) (get in Indian grocery store)/use chat masala (found in tesco/sainsbury etc)
  14. A piece of Cheese

Method

  • Wash and cut the top of the peppers as shown in the pic below

  • Coat them with some oil (use fingers/a brush) and keep it aside
  • Mash the rest of the ingredients (2-13) in a bowl and prepare a coarse mixture (Do TRY-Spread a thick layer of this mixture on a Wrap add some sliced cucumbers and tomatoes and roll it-to have Spicy Smash Potato Wrap)
  • Fill the mixture into the peppers and place it on a grill
  • In a pre heated oven Grill for about 15-18 mins (at about 160C); turning the peppers in between every 5-10 minutes
  • When peppers are done , remove the cap of peppers and grate cheese on top; serve hot

TIPS: I made this for the first time so the above is exactly how I made it; But for an easier way of cooking next time I would do the following

  • Cut the peppers into half (vertically)
  • Shallow fry the peppers in the pan

This will help me in cooking the pepper for a more time and cooking the almost already done mixture for a less time; Also easy to turn and reheat!!
